- 2 lbs ground beef, extra lean browned, drained and rinsed
- 1 (7 ounce) sausage, double smoked chopped in bits
- 20 large crimson mushrooms, sliced
- 1 (15 ounce) can kidney beans, drained and rinsed
- 28 ounces whole tomatoes, drained and rinsed
- 6 ounces tomato paste
- 5 ounces mrs. refros habanero salsa
- 1 white onion, large diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 orange bell pepper, diced
- 3 serrano peppers, diced
- 3 habanero peppers, pressed
- 1 1⁄2 bulbs of garlic, pressed
- 1 tablespoon spanish paprika
- 1 teaspoon cumin
- 1 teaspoon coriander seed, ground
- 1 tablespoon basil
- 1 tablespoon oregano
- 5 ounces red wine
- 5 ounces beer
- 3 beef bouillon cubes
- 2 tablespoons honey
- 2 tablespoons chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ground cayenne pepper
- 1 tablespoon fresh ground black pepper
- 1 1⁄2 cups old cheddar cheese, grated
directions
- Brown Ground beef and Double smoked sausage in a skillet, Drain and rinse with water.
- Prepare Peppers, Mushrooms and Onions
- Place all sauces into Stockpot (large enough for all ingredients), allow to simmer
- Add vegetables, beef and sausage
- Add all spices.
- stir regularly until full simmer.
- Mix in wine and beer.
- Cover and simmer for 4-6 hours (minimum).
- Continue to stir every 30 minutes or so.
- ready to serve.
- serve with grated cheese for topping, and garlic bread for dipping.
- Enjoy.
