- 2 medium eggs
- 1 egg white
- 1 cup oat bran
- 3 tablespoons low-fat Greek yogurt or 3 tablespoons low-fat fromage blanc
- 10 chives, snipped
- 3 flat leaf parsley sprigs, chopped
- 2 pinches ground cumin
- 2 pinches garlic powder
- 2 pinches chili powder
- 1 medium tomatoes, diced
- 1⁄2 medium summer squash or 1/2 medium zucchini, diced
- 1⁄4 onion, diced
- 1 teaspoon olive oil or 1 teaspoon avocado oil
- 1 1⁄2 teaspoons real parmesan cheese, grated
directions
- Whisk eggs and gradually incorporate oat bran, Greek yogurt, chives, parsley, and spices. Season with salt and pepper. Beat together vigorously by hand or with an electric mixer. Stir in tomatoes, squash and onion.
- Heat half of olive oil in a medium frying pan. Pour half of the mixture into the pan and let it cook over Medium heat for 3-4 minutes. Reduce heat to low. Carefully but quickly turn over like a pancake and let cook another 3-4 minutes, covered. Remove from pan. Repeat with rest of egg batter (or store in the fridge, covered, until later if you want to eat another frittata later).
- Grate fresh parmesan over the top and serve hot.
