I usually like to follow recipes right on down my first time making them, but I do have a hard time when it comes to peeling sweet potatoes, & didn't do that this time, either! Instead I cut them into bite-sized chunks, peel & all, & then mashed them by hand, leaving them a bit lumpy, which is exactly the way I like them! The combo of ginger & cider did a very nice number on this side dish, & we were very, very satisfied with the 'tatoes! Thanks much for sharing the recipe!
