- 1 cup pearl tapioca (not instant)
- 4 cups whole milk
- 5 eggs (Separated)
- 3⁄4 cup white sugar
- 1⁄2 teaspoon vanilla
directions
- Soak tapioca in 1 cup of the milk overnight in fridge.
- Add remaining milk and cook, stirring occasionally, in top of double boiler about 3 hours over medium low heat. Take off of heat.
- Beat egg yolks, sugar and vanilla together and add to tapioca and blend.
- Beat egg whites until stiff.
- Line a greased baking dish 9 x 9 with a layer of tapioca, egg white and repeat layer of tapioca and egg white.
- Bake in preheated oven of 325F for 15 minutes.
