- 1 cup mayonnaise (I use low fat)
- 1⁄2 teaspoon salt
- 3⁄4 teaspoon poultry seasoning
- 1⁄4 teaspoon onion powder
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon ground black pepper
- 1 tablespoon lemon juice
- 3 cups chicken breasts, cook and diced
- 1⁄2 cup celery, finely chopped
- 1⁄2 cup chopped green onion
- 1 (8 ounce) can water chestnuts (drained and chopped)
- 1 1⁄2 cups swiss cheese, diced
directions
- In a medium bowl, whisk together the mayonnaise, salt, poultry seasoning, onion powder, garlic powder, pepper, and lemon juice.
- In a large bowl, toss together the chicken, celery, green onions, water chestnuts, and swiss cheese. Add the mayonnaise mixture, and stir to coat. Chill until serving.

A nice new twist to chicken salad! I used a rotisserie chicken and needed extra dressing so I made 1.5 of the mayo mixture. For the first cup of mayo, I used light and for the other 1/2 cup I used regular Helmans. I did add a little more garlic powder than the recipe called for and maybe a little kosher salt. Oh, I did shred the cheese instead of dicing. I will make this again! Thanks for sharing!
