The Best Chicken Salad

"Adapted from a recipe on allrecipes.com. This is the best chicken salad I've come across yet! The seasonings are right on, and I love the extra crunch the water chestnuts add. I make this regularly during the summer months. Hope you all enjoy this, as well. :)"

  • In a medium bowl, whisk together the mayonnaise, salt, poultry seasoning, onion powder, garlic powder, pepper, and lemon juice.
  • In a large bowl, toss together the chicken, celery, green onions, water chestnuts, and swiss cheese. Add the mayonnaise mixture, and stir to coat. Chill until serving.

  1. Very tasty! I didn't want my usual bland chicken salad, so I thought I'd try this recipe. I liked the seasoning. I bet water chestnuts would be good, but I didn't have any. I added chopped hard boiled egg. I liked the lemon in it too. Thank you.

  3. This was soooo tasty! The seasonings were right on! I did omit the water chesnuts because I really don't care for them, and I used shredded cheddar cheese. I'm sure this would be great with just about any cheese you have. Wonderful recipe, Thanks for posting! Made for PAC 2009.
     
  4. A nice new twist to chicken salad! I used a rotisserie chicken and needed extra dressing so I made 1.5 of the mayo mixture. For the first cup of mayo, I used light and for the other 1/2 cup I used regular Helmans. I did add a little more garlic powder than the recipe called for and maybe a little kosher salt. Oh, I did shred the cheese instead of dicing. I will make this again! Thanks for sharing!
     
  5. We really enjoyed this! I too used low fat mayo and I did decrease the amount of poultry season to just a half teaspoon and skipped the onion powder as a personal choice. We too loved that extra crunch with the addition of the water chestnuts, yum! Thanks for sharing this keeper! :)

They are litter-mates, half Abyssinian/half tabby, and are my "baby boys"!:) I love to cook, and am an AVID recipe collector. Nothing like fresh tomatoes, peppers and herbs, straight out of the garden!:)
