Turkey Avocado Tumbles

- 3 avocados, halved and pitted
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 lb ground turkey
- 6 ounces salsa, medium
- 6 ounces plain Greek yogurt
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
- 1 teaspoon smoked paprika
- 2 tablespoons sour cream
directions
- Scoop halved avocados out of their skins in one piece, using a big spoon. Squeeze lemon juice over the cut side, drizzle with 1 tbs oil and salt and pepper to taste. Heat large skillet to medium and cook avocados for 2 mins, cut side down. Remove and place avocados on a plate, cut side up, cutting a small piece off the rounded side so it can sit flat. Add remaining oil to skillet. Add turkey and remaining seasoning and brown the meat, breaking it up with a spatula as it cooks. After it is no longer pink (~4 mins), remove from heat and stir in salsa and yogurt. Spoon the turkey mixture on top of the avocados, filling them and letting the excess spill over onto the plate. Top with a dollop of sour cream and sprinkle with cilantro. Serve with a simple mixed green salad for a quick, nutritious, and delicious dinner!
