Turkey With Curried Peanut Sauce
"This is one of my favorite recipes from Better Homes and Garden’s New Dieter’s Cookbook. The best part of this dish is that it is only 184 delicious calories a serving. You can also pair the zesty peanut sauce with broiled or grilled pork chops. Top each serving with a few crushed roasted peanuts, if desired and serve on a bed of rice with some steamed broccoli spears."

ingredients
- 1 lb turkey breast tenderloin steaks
- 2 tablespoons reduced-fat peanut butter
- 2 tablespoons low-calorie apricot jam
- 1 teaspoon curry powder
- 1⁄2 cup skim milk
- fresh chives (optional)
directions
- Rinse turkey; pat dry with paper towels. Spray an unheated large skillet with nonstick coating. Preheat over medium heat. Add turkey; cook for 6 to 8 minutes or until tender and no longer pink, turning once. Transfer turkey to a serving plate; cover and keep warm.
- In a small mixing bowl stir together the peanut butter, apricot spread, and curry powder. Stir in milk. Pour mixture into skillet; heat to boiling. Pour over turkey steaks. If desired, garnish with snipped chives.

I thought this was delicious. I didn't have any apricot jam, so I used mango chutney instead. This recipe is definitely a keeper! -
Special and tasty! My DH doesn't like apricot jam but we found that the combination of curry powder, peanut butter and the jam just right. Tonight, we will make it the second time in this month. However, I changed the recipe a little bit by marinate the sliced turkey with a bit of fish sauce, dry sherry, white pepper and curry powder to give it a deeper favour.

I was just recently married in Costa Rica to KC and his 6 year old son, Ty. Our wedding was perfect and I will cherish the memories forever. Leslie, Mama's Kitchen, sassafrasnanc, Mommy Diva and Chef V attended the wedding with their husbands!! Leslie's daughter Sarah was our flower girl and her hubby Wayne was our talented musician! I had the time of my life!!!

Our family is rounded out with 6 Bengals, 1 Jack Russell Terror named Harley, a ferret named Mason, giant gold fish, a water dragon named Crusoe, a Beautiful Appaloosa/Arabian named Sassy, a stunning Palomino Quarter Horse named Sweet Pea and a gorgeous black Standardbred named Domino! We also have added a Leopard Appaloosa rescue horse to the mix. Her name is Pebbles and she is lovely!

I love Zaar! I have so many wonderful friends here and I really enjoy being a Forum Host. I love the games in the Contest & Events Forum! The games are addictive and a great opportunity to meet the members of this community. I had a blast co-hosting the first Zaar World Tour 2005 with ~Leslie~. Zaar World Tour II doubled in size and ~Leslie~ and I were joined with co-hosts Mama�s Kitchen and kzbhansen. Zaar World Tour 3 doubled again in size and Leslie, Mama's Kitchen and I were joined with SusieD, PanNan and JustCallMeToni! We also established the "Whine and Cheese Gang" which was a wonderful team that was put together to help all the teams playing. Zaar World Tour IV will be bigger and even better!!!
