Vegan Oaty Pancakes or Waffles (Healthy)

ingredients
- 3⁄4 cup whole wheat flour (I used whole spelt flour)
- 1⁄4 cup flour
- 1⁄8 teaspoon salt
- 2 teaspoons baking powder
- 1⁄2 teaspoon cinnamon
- 1⁄8 teaspoon ground nutmeg
- 1 tablespoon sugar
- 1⁄4 cup muesli
- 1⁄4 cup oats
- 1 1⁄3 cups vanilla soymilk (or other non-dairy milk)
- 1⁄2 teaspoon vanilla extract
directions
- In a big bowl combine flours, salt, baking powder, cinnamon, nutmeg, sugar, oats and muesli.
- In a second bowl combine vanilla soy milk and extract. Add this to the dry ingredients and stir to combine. If youre planning on making pancakes, you might want to add a tad more milk to make the dough more liquid.
- Allow dough to rest for about 10 minutes to give the baking powder time to start working (this will make for lighter pancakes/waffles).
- Preheat and oil waffle iron or frying pan/griddle and once they are hot, bake out waffles or pancakes.
- For a pancakes use about 1/4 cup of batter and flip it once bubbles rise to the top of the dough. Cook until golden.
- Enjoy.
