  • In a frying pan, add olive oil & garlic & fry until toasted.
  • Add mushrooms & dijon & stir.
  • Toast bread, then spread with the avocado.
  • Top with the mushrooms.
  • Add tomato & spinach (& any other veggies you wish) to the pan & heat until warm. .
  • Top the mushroom toast with this mixture & sprinkle with parsley sprigs. Enjoy!
