Vegan Toast W/ Mushrooms, Guacamole & Veggies - Gluten Free

- 1 slice healthy bread (I like Dave's Killer Bread "Good Seed")
- 1 teaspoon garlic, minced
- 1 tablespoon olive oil
- 1⁄4 cup mushroom, sliced
- 1⁄4 cup Baby Spinach
- 1 tomatoes, sliced
- 1⁄2 avocado
- 1 teaspoon kosher salt
- 1⁄2 teaspoon black pepper
- 1 sprig parsley
- 1 tablespoon Dijon mustard
directions
- In a frying pan, add olive oil & garlic & fry until toasted.
- Add mushrooms & dijon & stir.
- Toast bread, then spread with the avocado.
- Top with the mushrooms.
- Add tomato & spinach (& any other veggies you wish) to the pan & heat until warm. .
- Top the mushroom toast with this mixture & sprinkle with parsley sprigs. Enjoy!
