  • Preheat oven to 400°F.
  • In a non stick skillet sprayed with cooking spray saute chopped onions & peppers.
  • Add chopped ham half way through cooking.
  • In a 9x13 baking dish pour in frozen hash browns, spread out evenly.
  • Sprinkle with salt and pepper or any other seasonings you like.
  • Mix in the sauteed veggies & ham.
  • Add 1 cup of cheese.
  • In a bowl combine the milk, Bisquick and eggs; whisk together.
  • Pour over the top of the ham, hash brown, cheese mixture.
  • Bake uncovered for 40 minutes or until knife inserted in the center comes out clean.
  • Sprinkle the rest of the cheese over the top and bake until melted.
  • Remove casserole and let stand 5 minutes.
  • 3 Points per serving. Serves 12.

  1. I was looking for something to make ahead for my week day breakfasts on the go. I had made a similar dish before and it was really bland, so I jazzed this one up with seasonings at every step.<br/>I used pork sausage (on hand) and added sage and garlic, then cooked bell peppers and onion separately seasoned with oregano, s&p and chili flakes. The potatoes had their own seasoning.<br/> To the Bisquick, I added ancho chili powder (just a little), paprika and s&p. Baked it in a smaller pan for thickness 40 min. When cooled, divided into six pcs and put them into the freezer. Pull one out for breakfast, microwave 1min 30sec, mabe add a little pica de gallo.
     
  2. I made this last night so I'd have breakfast for the week. I substituted 10 pieces of crispy turkey bacon for the ham, but used everything else as called for. This was very easy to make. I found it a little bland for my personal tastes, I added some garlic salt, red pepper flakes, and hot sauce, but I feel like it probably needed a bit more. Overall, however, this was good and I will definitely make it again. It's also quite filling- it's been 2 hrs since breakfast and I'm not hungry again yet. Thanks for sharing.
     
  3. I made this casserole for dinner, (In our household we like breakfast any time of day!). I used turkey bacon in place of ham. This took about 10 minutes longer to cook than than the recipe said. It was pretty tasty.
     
  4. this was soooo great!!! it smelled so good when it was cooking and is going to be breakfast and lunch in this house! i didnt have any egg substitute so i used a cup of raw eggs, about 4 large eggs, and alot more cheese, probably 3 cups or more, but it was great!!!! will definetly make it again!! thank you very much!
     
  5. Tai I just fixed this for supper tonite as the kids and I like breakfast for dinner. I was not WW for us though and that made for a richer more calorie laden casserole that we all loved! I used regular shredded cheddar, bisquick clone (12648) from zaar, 2% milk and real eggs to make a cup...Popped some refrigerated cinnamon rolls in while it was baking and had that with some cold applesauce. Kids were dividing up portions to "save" for breakfast ont he run in the morning. Thanks for a super recipe anytime of the day!
