Dijon Encrusted Pork Tenderloin

"This is SO easy and quick. Each tenderloin should serve 2 people; simply double or triple for more people. This is a favorite at our house and the leftovers (if there are any) make a great sandwich to take to work or school the next day."

  • Place tenderloin in greased baking dish.
  • Spread Dijon mustard over top of tenderloin.
  • Sprinkle pepper, thyme and rosemary on top of Dijon coating.
  • Bake at 350 for 45 minutes, or until done as shown by meat thermometer.

  1. I make this too, except I add bread crumbs in with the spice mixture and coat the meat. Guests are impressed with this easy entree.

  4. We eat pork tenderloin frequently (bought in bulk at a "Big Box") - so always trying to vary the taste. This was quick, easy, and had the right combination of ingredients. Using the probe thermometer, cooked in 25 minutes, to 150 degrees ! Very moist and flavorful. Will do again. Thanks.
     
  5. Juicy and delicious! The only change I made to this really easy and fast recipe was to add garlic, because that's what I do to everything except desert. Thanks, Theresa, we'll use this recipe again.
