Lumpia - Simple and Easy

ingredients
- 1 lb ground pork (very lean)
- 2 garlic cloves, crushed
- 1⁄2 cup chopped onion
- 1⁄2 cup minced carrot
- 1⁄2 cup chopped green onion
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 30 lumpia skins (substitute egg roll wrappers if you can't get lumpia skins)
- 1 cup vegetable oil (for frying)
directions
- Mix all ingredients,.
- Put one tablespoons of the mixture in the center of each Lumpia skin and roll into a cigar shape. Using your finger, wet the edge of the wrapper just slightly to hold it together.
- Using a wok or deep skillet, fry in the oil until golden brown.

I had never tried or made lumpia before but my husband loves it so I thought this recipe sounded do-able! I used some fresh grated ginger and some diced water chestnuts as well. I was surprised that frying them in the oil for only 5 minutes or so got all the pork inside nice and done. This lumpia was SO DELICIOUS and very easy. I used egg roll wrappers as that's all my store had. Thanks for a great recipe! ***Update*** DH wanted these again but the store was out of ground pork. I used ground turkey and they were absolutely delicious. I also finely diced a large anaheim pepper and added it to the mix. That added a bunch of flavor and just the tiniest hint of spice. Thanks for a great recipe we will use over and over again.

I love lumpias and have made them many times! There are alot of Filipino people in my area. mmmm chicken adobo is good too! Anyway, this looks like the best recipe on here for lumpias. I like to sometimes use half grounf pork and half shrimp. I love waterchestnuts in them too. I also use a pineapple dipping sauce or a suace which is about half 60 percet soy sauce 4o percent rice wine vinegar, and some garlic powder.

I love this recipe! I follow it almost to a "t" but do make some changes. I use cabbage and a dash of fish sauce in place of salt. It's very strong and a little goes a long way but OMG!! I make big batches (double or more) at a time and freeze them in smaller batches for anytime our house has a craving for it and toss together some pancit too. It's soooo good!

I spend a lot of time traveling around the Philippines in search of beautiful scenes to paint . I love to paint “en plein air” ( out in the open air) and of course the scenery is beautiful as well as plentiful. The women of this tropical paradise are slim, trim with natural tans, are absolutely gorgeous and make great painting subjects.
I love to cook American dishes for my Filipino friends who really do love them. I have learned to cook many delicious Filipino dishes mostly from my Filipino Mother-in Law who lives with us. I have taught her to prepare many American Dishes and she is an expert cook. Most American foods cannot be purchased here and some ingredients are impossible to find so my Sister ships to me what I cannot purchase here. My Filipino Mother-in- Law learned to make delicious patty sausage from scratch which is mostly used for sausage gravy which I love with biscuits. I make great light and fluffy biscuits from scratch, Bisquick is not available here.
