  • Stir all ingredients in bowl with spoon until blended.
  • Bake on greased hot griddle or in skillet until browned on both sides and done in middle.
  • To freeze pancakes: Place waxed paper between cooled pancakes and place into freezer bag (Ziplock-type). Remove as much excess air as possible and seal. Freeze.
  • To reheat: Place desired number of pancakes on plate. Microwave on high for 1 minute Check. If not done, turn over and heat for additional 30-60 seconds.

  2. Very good! I used milk instead of water and they were fabulous. We added a bit of allspice and baking powder to make them fluffy!
     
  3. These are fabulous! You can't even tell there are oats in these! I added some carrot puree and a dash of cinnamon and nutmeg. There is no way this would feed 12 people, but it will feed a family of 4. I got 14 pancakes. Thanks!
     
  4. these were vey good, i added some fresh peaches to the recipe and topped it with boysenberry syrup..they were very good!

With 5 kids and a hungry husband to feed, I'm always looking for good, budget friendly meals. We generally eat meals that use little meat (I try to use 1 lb or less per dinner, and none the rest of day), so that means lots of casseroles and meats with gravy. I enjoy baking, so bread recipes and desserts tend to get saved more frequently than others. I'm especially partial to chocolate and lemon (although not together).
