Tuna and Pipi Pilaf

- pipis (2 Handfuls)
- 1⁄2 cup rice
- 4 cloves garlic, chopped
- 1 red onion, cubed
- 2 ripe tomatoes, , cubed
- 2 eggs, made into omelet and chopped up small
- sambal oelek (or any other chilli)
- 1 dash soy sauce
- 1 dash oyster sauce
- 1 lemon, juice of
- 1 cup water
- 1 can good tuna
directions
- Steam pipis to open, scrub out sand and remove from shells.
- Set aside.
- Brown rice in oil, (until opaque), add onion, garlic, soy and chilli and stir in.
- Add water and put the lid on, let it bubble away until the rice soaks up the water.
- Taste the rice then and if it is not tender or to your liking, add more water as before until rice is"Al dente".
- When rice is cooked, turn heat down and stir in tomato, pipis, tuna, lemon juice and oyster sauce.
