  1. In a large bowl combine quinoa, ham, apple, celery and celery leaves.
  2. In a small bowl, whisk together oil, vinegar, mustard and honey. Add to quinoa and gently toss to coat.
  3. Season to taste with salt and pepper. Cover and refrigerate at least 30 minutes. Serve topped with pecans.
