- 2 lbs ground lamb
- 1 tablespoon olive oil
- 1 small onion, minced
- 3 garlic cloves, chopped
- 1⁄4 cup breadcrumbs
- 1⁄2 teaspoon chopped fresh rosemary or 1/4 teaspoon dried rosemary
- 2 tablespoons cayenne or 2 tablespoons chili sauce
- salt & freshly ground black pepper, to taste
- 4 good quality hamburger buns
directions
- Place the ground lamb in a large bowl.
- In a small saute pan over high temperature, heat about 1 teaspoon of the olive oil until very hot. Add the onion and garlic and saute until they begin to give off their aroma, 2 or 3 minutes. Set aside to cool.
- Add the cooled onion mixture, bread crumbs, rosemary, cayenne sauce, and salt and pepper to the ground lamb and mix thoroughly. Form into 4 burgers.
- In a medium saute pan over high temperature, heat the remaining olive oil until smoking hot. After 1 minute, turn the heat to medium. Cook the burgers about 3 minutes on each side for medium, or as long as you prefer.
- Top with a mild fresh goat cheese or your favorite cheese. Serve the Lamb Burgers on good-quality buns accompanied by your choice of condiments.
