- 1 lb chorizo sausage, casings removed
- 1 medium onion, chopped
- 1 (15 ounce) can pinto beans, rinsed and drained
- 8 eggs
- 1 cup heavy cream
- 1 cup sour cream
- 3 cups tortilla chips
- 2 cups cheddar cheese, shredded
- 2 tablespoons cilantro leaves
directions
- Preheat oven to 375 F.
- Cook chorizo until browned in a large nonstick skillet over medium-high heat.
- Transfer chorizo to a 3-quart baking dish.
- Saute onion in the pan drippings until golden.
- Stir beans into onions and transfer to baking dish.
- Beat the eggs, heavy cream and sour cream together. Pour into dish.
- Press chips into the mixture so they stand up.
- Sprinkle with cheddar and bake until the eggs are set (45 minutes).
- Sprinkle with cilantro and salsa (optional).
