Winter Meatloaf

- 3 slices hearty white bread, crusts removed
- 1 cup milk
- 1 egg
- 1⁄2 onion
- 1 teaspoon fresh thyme (1/2 tsp dried)
- 1 tablespoon apple cider vinegar
- 1 lb lean ground beef
- 1⁄2 lb pork sausage, casings removed
- 2 tablespoons fresh dill, chopped
- 1 teaspoon salt
- pepper, 3 grinds
- 1 tablespoon tomato paste
- 1 tablespoon honey
- 1 teaspoon brown mustard
- 1 pinch ground coriander (a fat pinch)
directions
- Break the bread into a large bowl.
- In a blender or food processor, combine the milk, egg, onion, thyme, and vinegar.
- Pour over the bread and mix well. Allow enough time for the bread to soak up the milk.
- Add meats, dill, salt and pepper, mixing throughly.
- Pat the mixture into a loaf pan.
- Stir together the tomato paste, honey, mustard, and coriander. Spread over meat loaf.
- Bake at 350* for 1 hour.
- For a brown crust, turn on the broiler at the end of cooking.

This was REALLY good! I've been on a serious hunt for the perfect meatloaf and this comes pretty close. The only change that I made was to add 2 cloves of garlic and a few dashes of worcestershire sauce. My 2 kids loved it and my husband who usually hates meatloaf was a huge fan. Thanks for the great recipe!!
